The tummy love:
Kitchen Sink Salad- What it sounds like. SO GOOD.
Pesto Chicken Pasta- W/ lots of mini mozzarella balls. I like it when they get stretchy. Like me 😛
Asparagus, Tomato, and Fontina Frittata– Note to self: OVEN MITTS! OVEN MITTS! Frittatas get baked. When you are making more than one you need to remember that the pan is DAMN hot. But then again, I’m a kerfuffle in the kitchen; these mini ‘disasters’ are the norm. (And, my spontaneous shaking of a frozen blueberry burn treatment ice pack did ignite a HILARIOUS shake weight -CLICK NOW!!!- conversation ;)) Need aloe… STAT.
‘Oh Baby’ Bars- These are HOMEMADE chocolate peanut butter bars! I think they taste better than Reese’s. Probably because I add love. And, cinnamon. And now, you can too:
‘Oh Baby’ Bars (Adapted from Eat, Live, Run)
2 T- Brown sugar
1 1/3 cup- Powdered sugar
1/4 cup- Butter- very soft please!
3/4 cup- (your favorite) PEANUT BUTTER
1 cup- Milk chocolate chips
½ cup- Semi-sweet (or darker) chocolate chips
1 T- Butter
½ t- Salt
½ t- Cinnamon
Line a spring-form pan with foil. Actually any pan will do.
Massage together the brown sugar, powdered sugar, butter and peanut butter until they are merged into an ‘extreme sweet powered peanut butter’ (ESPPB). Press the ESPPB into the bottom of your prepared pan.
Melt the chocolate with the tablespoon of butter over very low heat (or in a microwave). Stir in salt and cinnamon. Pour melted chocolate over the ESPPB. Refrigerate. (If you can help yourself!)
